I fell in love with quiche in college. It was a food that my lacto-ovo-pesco vegetarian friends and I could eat together. Best of all, we could buy it at the local deli pre-made and all we had to do was heat it up. It was fabulous. Fast forward a few years and when my husband asked me if I wanted to make a quiche I instantly said, "Yes!" Of course, I had no idea how. But it wasn't hard and the longest part is letting it cook for an hour. So I felt like I needed to share this with you. It's so yummy!
I do ask you to keep in mind that this recipe can be changed very easily. The main thing with quiche is that it all has to set in the egg and cheese mixture. You can add as many or few things as you want. I like to load mine up with veggies, and even though there is protein in eggs, my husband and I like to add ham to give it that nice salty character every bite or two. This is how we make our quiche. You can add whatever you like to yours.
Our quiche has:
1 pie crust
1 package of frozen spinach
1 onion, diced, sauted
1 packaged of fresh mushrooms, diced, sauted
Apx. 1 C of diced ham steak (optional)
Apx. 1/2 feta, crumbled
Apx. 1/2 sharp cheddar, shredded
6-7 eggs
Dash of salt
Dash of pepper
Tomato slices (optional)
Preheat oven to 350. You start with a pie crust. We use the pre-made ones because, well, they're easy. And sometimes, I just don't want to bust out flour and make a pie crust. Anyway, let it sit out and start to warm. While that's going on, you are going to want to saute your onions and then your mushrooms and then set them aside to cool.
Once cool, place them in the eggs which you have cracked and whisked. Don't put hot things into the eggs because it will start to cook them. Same thing goes for the spinach. Heat it according to the instructions and drain all excess juice before putting into mixture. Add ham, most of the cheeses and salt and pepper.
Stir well, and place in the pie crust. Should be somewhat liquidy. Sprinkle leftover cheese on top and place tomato slices. (They don't add much flavor, but they are pretty.) Pop it in the oven and bake for about an hour or until done through - the whole toothpick or fork in middle coming out clean thing :) And eat!
